What do i need?

For the syrup:

  1. 3 ½ cup sugar
  2. 3 cups water
  3. 1 tbsp lemon juice

For the dough:

  1. 3 eggs
  2. 2½ cup Jenan All Purpose Flour
  3. 2 cups water
  4. 1 tbsp sugar
  5. 2 tbsp butter
  6. 2 tbsp semolina
  7. 1 tbsp starch
  8. Pinch of salt
  9. Oil to deep fry

For the custard:

  1. 8 Jenan Egg yolks
  2. ½ cup granulated sugar
  3. ½ tsp cornstarch
  4. 1/8 tsp salt
  5. ¾ cup milk
  6. 2/3 cup heavy cream
  7. 1 tsp vanilla extract

How do i prepare it?

  1. For the syrup, boil water and sugar and add lemon juice
  2. Let it boil for 5-10 minutes more and let it cold
  3. Meanwhile start preparing dough by putting water and butter in a pot
  4. Mix it well to melt butter in water
  5. When it boils, sift flour and add it into pot little by little
  6. Add salt and sugar and mix it fast with a wooden spoon
  7. You will have a non-sticky dough in about 10 minutes over low heat
  8. Take the pot from stove and let the dough cool down
  9. Break eggs into it one by one and mix with your hands
  10. Add in starch and semolina and continue mixing with hands until you have a creamy dough
  11. Fill a frying pan with oil
  12. Fill the dough into a piping bag with a star nozzle
  13. Squeeze dough pieces into oil when it is still cold
  14. Let them double size over medium heat, the slower they are fried, the crunchier they are
  15. When they are fried, transfer them into cold syrup
  16. Wait them in syrup for 1-2 minutes and take them with a slotted spoon
  17. Before frying the rest of dough, let the frying oil cold and repeat the same steps
